Ingredients
2 thick-cut bone-in pork chops (about 1½ inches each)
1 tablespoon olive oil
1 teaspoon kosher salt
½ teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried thyme
1 tablespoon light brown sugar
2 tablespoons butter
1 clove garlic, minced
1 sprig rosemary or thyme (optional)
Instructions
1. Pat the pork chops dry and coat evenly with seasoning. Let rest for 15 minutes before cooking.
2. Heat olive oil in a heavy skillet over medium-high heat until hot.
3. Sear the chops for 3–4 minutes per side until golden brown.
4. Reduce the heat, then add butter, garlic, and rosemary. Baste the chops with melted butter for 1–2 minutes.
5. Check internal temperature with a meat thermometer — it should reach 145°F.
6. Remove from the skillet, rest for 5 minutes, then serve with your favorite sides.
Notes
For maximum tenderness, brine the pork chops for at least 30 minutes before cooking.
Avoid overcooking — pork should be slightly pink inside when done.
Experiment with glazes like honey-mustard or maple for added sweetness.
Use a cast-iron skillet for best sear results.
